As our Technical Director, brewer Mary Wiles keeps our beer consistent and delicious. With a resume longer than a Garrett Oliver recipe, Mary, a certified brewmaster in her own right, can answer all of your zmurgy questions, whether they are about beer's molecular composition or which maple trees in upstate NY yield the best maple syrup for brewing with. We'll be doing a sampling of some of our rarest brews, including Mary's Maple Porter, a Brewmaster's Reserve we created using Mary's own maple syrup company. Join us for this public forum on all things brew related.
Additionally, St. James Cheese will be on hand to walk us through the intricate flavor pairings that make beer and cheese so wonderful together.
Mary Wiles has dedicated her life to the pursuit of delicious beer. Graduating with a Master’s degree in Chemical Engineering, Mary started a 30 year career with Anheuser-Busch working her way up from Process Engineer to Brewmaster. After she spent two years of consulting work for Sam Adams, we tapped Mary to be our Brewing Quality Assurance Manager. Overseeing our brews at F.X. Matt Brewery in Utica as well as everything coming out of Brooklyn, Mary’s knowledge of best practices and brewery waste treatment help all of our beers stay fresh and clean. Mary lives on her Onondaga, NY maple syrup and Christmas tree farm. She is also the proprietor of the Cedarville Maple Syrup Co. with her husband Karl. She is the nicest person Brooklyn has ever met.
